Each Dine on the Prairie will include a five-course dinner feast served outdoors on a 100-foot cedar table, featuring local and organic ingredients grown steps away; a farm tour, hayride and fishing; live music; and a bonfire with a gourmet s’mores bar. Slagel Family Farm is excited to announce its farm tour & dinner. The afternoon will begin with a butchering demo at Slagel Family Meats, including a demonstration how to butcher either a beef, pork or lamb carcass into retail cuts. LouisJohn (The Farmer) will then give a farm tour of his family livestock farm. Guests will see a variety of livestock and learn about the old fashioned production practices the Slagels use to produce their farm-fresh meat products. Outstanding In The Field’s first visit to Illinois was back in 2004. They had a chef, Chicago’s legendary Paul Kahan, but no farm. Kinnikinnick was Paul’s choice. Since then they have become friends with farmers David and Susan Cleverdon, and are always happy to see them, even if it’s just once a year. This year, farmer David chose the chef: Bruce Sherman of North Pond, considered one of Chicago’s finest special occasion restaurants. Using ingredients grown or raised within 100 yards of the dinner table, this is one of Prairie Fruits’ most popular and cherished annual feasts. The Sunday Dinner Club chefs will be riffing on a late-summer Mediterranean theme — expect fresh and charred veggies, lots of tomatoes, bread made with locally milled flour (we allow ourselves a few exceptions to the 100 yard rule, especially now that we have local flour grain grown within 50 miles of the farm), fruit from the orchards, grilled meats and poultry, chevre and aged goat cheeses, lots of fresh herbs, and bright flavors. The plant family, Cucurbitaceae, is one of the most diverse on the planet.  Guest Chef Nicole Pederson is a not daunted by this diversity; au contraire, she is excited to prepare a multi-course meal celebrating as many varieties of squashes and pumpkins that we can get our hands on. Slagel Family Farm is excited to announce its farm tour & dinner. The afternoon will begin with a butchering demo at Slagel Family Meats, including a demonstration how to butcher either a beef, pork or lamb carcass into retail cuts. LouisJohn (The Farmer) will then give a farm tour of his family livestock farm. Guests will see a variety of livestock and learn about the old fashioned production practices the Slagels use to produce their farm-fresh meat products. A farm dinner will then be served family-style in a new barn right next to the livestock pastures.Feel free to BYOB; lemonade and water will be provided. Bus transportation from Chicago will be provided at noon; when purchasing your ticket please select your transportation option.
